Opened in 2019 and named after internationally renowned Chef Marcus Samuelsson, the restaurant is now helmed by Executive Chef Jason Morris, who brings a refined, ingredient-driven approach rooted in seasonality and creativity. Under his direction, Marcus has been proudly recommended in the Michelin Guide 2025.

From the open-concept kitchen, Chef Morris crafts an ever-evolving menu that celebrates local ingredients through a seafood-forward lens. At the bar, Chef Sommelière Alexandra Guay curates a thoughtful wine program that has earned the Wine Spectator Award of Excellence since 2023, while Head Mixologist Jay Lawson redefines cocktail culture with bold, theatrical creations that mirror the energy of the room.

Jason Morris - Executive Chef

Meet Montreal-born Jason Morris, a culinary virtuoso whose journey spans some of the world’s most acclaimed kitchens. From Corton in New York to the three-Michelin-starred Maaemo in Oslo, he mastered the art of precision, fermentation, and creative expression under globally renowned chefs.

Now back in Montreal, Chef Jason is redefining the city’s culinary scene, fusing global technique with bold, local flavors to craft unforgettable, ingredient-driven experiences at Marcus.

Alexandra Guay - Chef Sommelier

With a rich and worldly background in wine curation, Chef Sommelière Alexandra Guay has explored vineyards from Provence to the vibrant dining scenes of Rio de Janeiro and beyond. At Marcus, she brings her passion for discovery to every glass : crafting bold, exclusive wine lists designed to elevate the culinary journey and create unforgettable moments for each guest.

Jay Lawson- Head Mixologist

Jay isn’t your average bartender. He’s a chemist-turned-cocktail visionary, known for blending precision with playfulness and adding a touch of theatre to every glass. As Bar Production Manager and Head Mixologist, Jay Lawson brings over 13 years of experience to the bar. He honed his craft at some of North America’s most celebrated cocktail destinations, including Stillife, Pastel, Le Fantôme. 

Thanks to his leadership, Cloakroom Bar, which he managed, earned a spot on North America’s Top 50 Bars list for three consecutive years. Known for his personality, technical flair, and artistic approach, Jay is passionate about fermented drinks and obsessed with detail, he brings a sense of theatre and storytelling to every creation. Now at Marcus, he leads a new era of cocktail culture - one rooted in innovation, bold ideas, and deep industry insight.
